Fruity Almond Jelly Recipe

Want some healthy snacks? Well, dig into this mummy jiggly fruity jelly that is easy to make. I’m sure you, your family and friends will like it.

Just saw this recipe in a back issue of yummy magazine and I love it so I decided to share this with HeartyCravings readers. 

Fruity Almond Jelly Recipe

INGREDIENTS:
4 cups cold water, divided
3tbsp or 3 envelopes unflavored gelatin
3/4 cup sugar
1 cup evaporated milk
2 tsp almond extract
2 mangoes, sliced
4 cups lychees, quarted (syrup reserved) / peaches
2 kiwis, peeled and sliced into half rounds
8 pcs Cherries, halved, for garnish


PROCEDURE:
1. In a cup or bowl, place 1 cup cold water. Sprinkle gelatine and let it stand for 5 ,inutes. Transfer to a saucepan. Add the remaining water and suger. Dissolve gelatin and sugar, stirring continuously over low heat.
2. Add milk and almond extract; mix well. Transfer mixture to 2 (9x13x1-inch) rectangular glass dishes. Refrigerate overnight or until almond jelly sets.
3. Slice almond jelly into 1-inch squares.
4. Scoop flesh of the mangoes into balls; set aside.
5. To serve, place 1/2 cup xrushed ice per bowl. Top with 8 almond jelly squares, 4 lychees or sliced peaches, 3 mango balls, and 4 kiwi slices. Drizzle with 2 tbsp lychee/peach syrup and garnish with cherry halves.

SERVINGS: 8 servings

*** if you don’t like some of the fruits, like me , you could also change it. Try apple, mango, cherries, grapes or orange. You could also add sago, nata de coco or black pearls if you want. It’s really up to your taste.
